Race Cakes

My children are grown up. They have graduated from college, and are building their careers. I couldn’t be more proud. When they were growing up I would make pancakes from scratch for them every Saturday morning. We called them Race Cakes given my passion for cars. I miss those Saturday mornings with the kids.

Here’s the easy-to-make recipe. 

1 egg

 1 cup buttermilk

1 tbsp canola oil

2/3 cup flour

2 tsp baking soda

1 tbsp sugar

Blend the egg, buttermilk, and oil together until smooth. Beat in the flour, baking soda and sugar. Heat a griddle to 350 degrees, pour and cook your cakes. My daughter loved semi-sweet chocolate chips cooked in to her cakes. I like crisp bacon chips in mine. Serve with real maple syrup and fruit on the side. Makes 8 large pancakes. Double the recipe if  you have lots of kids or you’re really hungry. Enjoy!

  1. Nice Mark! Ones kids are the biggest project you will ever undertake in my opinion. I am lucky I still have them with me and they still want to spend time with their parents. Today on Spring break we are headding to Laguna Seca for a private track event.(observing only)

  2. Mark, mine are grown and long gone, too. Sunday is pancake day for my wife and me. Saturday I listen to a local car show on the radio from 0600-0800, then Car Talk re-runs at 0900.
